Steps
- In a bowl, combine gluten-free soy sauce, rice vinegar, minced garlic, and ginger. Add the chicken thigh fillets and marinate for at least 15 minutes.
- In another bowl, mix gluten-free flour, cornstarch, water, salt, and black pepper to create a batter.
- Heat vegetable oil in a deep pan over medium heat. Once hot, dip the marinated chicken into the batter, allowing excess to drip off.
- Carefully place the battered chicken into the hot oil, frying in batches for about 6-7 minutes until golden brown and cooked through.
- Remove the chicken and drain on paper towels to remove excess oil.
- Slice the fried chicken into bite-sized pieces, garnish with chopped spring onions, and serve hot.
