Ingredients

  • Cornstarch - 1/4 cup
  • Water - 100 ml

  • Black pepper - 1/4 teaspoon
  • Vegetable oil - for frying
  • Spring onions - 2, chopped (for garnish)

Steps

  1. In a bowl, combine gluten-free soy sauce, rice vinegar, minced garlic, and ginger. Add the chicken thigh fillets and marinate for at least 15 minutes.
  2. In another bowl, mix gluten-free flour, cornstarch, water, salt, and black pepper to create a batter.
  3. Heat vegetable oil in a deep pan over medium heat. Once hot, dip the marinated chicken into the batter, allowing excess to drip off.
  4. Carefully place the battered chicken into the hot oil, frying in batches for about 6-7 minutes until golden brown and cooked through.
  5. Remove the chicken and drain on paper towels to remove excess oil.
  6. Slice the fried chicken into bite-sized pieces, garnish with chopped spring onions, and serve hot.
