Ingredients

  • Chicken thigh, boneless - 300 grams
  • Shiitake mushrooms - 100 grams
  • Napa cabbage - 150 grams
  • Carrot - 1 medium (about 100 grams)
  • Green onions - 2 stalks
  • Ginger, sliced - 10 grams
  • Garlic, minced - 2 cloves
  • Soy sauce - 30 ml
  • Mirin - 30 ml
  • Dashi stock - 500 ml
  • Sesame oil - 1 tablespoon
  • Tofu, firm - 150 grams

Steps

  1. Prepare the ingredients: Cut the chicken thighs into bite-sized pieces, slice the shiitake mushrooms, chop the napa cabbage into large pieces, julienne the carrot, and chop the green onions.
  2. In a medium pot, heat the sesame oil over medium heat. Add the minced garlic and sliced ginger, sautéing until fragrant, about 1 minute.
  3. Add the chicken pieces to the pot and cook until they are lightly browned on all sides, about 5 minutes.
  4. Pour in the dashi stock, soy sauce, and mirin. Bring to a gentle boil.
  5. Once boiling, reduce heat to a simmer and add the napa cabbage, carrots, shiitake mushrooms, and tofu. Cook for an additional 10 minutes until the vegetables are tender and the chicken is cooked through.
  6. Garnish with chopped green onions before serving. Enjoy hot, directly from the pot.
