- Chicken thigh, boneless - 300 grams
- Shiitake mushrooms - 100 grams
- Napa cabbage - 150 grams
- Carrot - 1 medium (about 100 grams)
- Green onions - 2 stalks
- Ginger, sliced - 10 grams
- Garlic, minced - 2 cloves
- Soy sauce - 30 ml
- Mirin - 30 ml
- Dashi stock - 500 ml
- Sesame oil - 1 tablespoon
- Tofu, firm - 150 grams
Steps
- Prepare the ingredients: Cut the chicken thighs into bite-sized pieces, slice the shiitake mushrooms, chop the napa cabbage into large pieces, julienne the carrot, and chop the green onions.
- In a medium pot, heat the sesame oil over medium heat. Add the minced garlic and sliced ginger, sautéing until fragrant, about 1 minute.
- Add the chicken pieces to the pot and cook until they are lightly browned on all sides, about 5 minutes.
- Pour in the dashi stock, soy sauce, and mirin. Bring to a gentle boil.
- Once boiling, reduce heat to a simmer and add the napa cabbage, carrots, shiitake mushrooms, and tofu. Cook for an additional 10 minutes until the vegetables are tender and the chicken is cooked through.
- Garnish with chopped green onions before serving. Enjoy hot, directly from the pot.
