Ingredients

  • Short-grain rice - 1 cup (200g)
  • Chicken thigh, boneless and skinless - 300g
  • Dashi stock - 2 cups (500ml)
  • Soy sauce - 2 tablespoons (30ml)
  • Mirin - 1 tablespoon (15ml)
  • Sake - 1 tablespoon (15ml)
  • Green onions, chopped - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Rinse the short-grain rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a medium pot, heat the sesame oil over medium heat and add the diced chicken thighs. Season with salt and pepper, and sauté until golden brown, about 5-7 minutes.
  3. Add the dashi stock, soy sauce, mirin, and sake to the pot with the chicken. Bring to a simmer.
  4. Drain the soaked rice and add it to the pot. Stir gently to combine, then bring the mixture back to a simmer.
  5. Cover the pot with a lid, reduce the heat to low, and cook for 20 minutes. Do not lift the lid during cooking.
  6. After 20 minutes, turn off the heat and let the pot sit, covered, for an additional 10 minutes to allow the rice to absorb the remaining liquid.
  7. Fluff the rice gently with a fork, and stir in the chopped green onions before serving.
