Ingredients
- Short-grain rice - 1 cup (200g)
- Chicken thigh, boneless and skinless - 300g
- Dashi stock - 2 cups (500ml)
- Soy sauce - 2 tablespoons (30ml)
- Mirin - 1 tablespoon (15ml)
- Sake - 1 tablespoon (15ml)
- Green onions, chopped - 2 tablespoons
- Sesame oil - 1 teaspoon
- Salt - to taste
- Pepper - to taste
Steps
- Rinse the short-grain rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a medium pot, heat the sesame oil over medium heat and add the diced chicken thighs. Season with salt and pepper, and sauté until golden brown, about 5-7 minutes.
- Add the dashi stock, soy sauce, mirin, and sake to the pot with the chicken. Bring to a simmer.
- Drain the soaked rice and add it to the pot. Stir gently to combine, then bring the mixture back to a simmer.
- Cover the pot with a lid, reduce the heat to low, and cook for 20 minutes. Do not lift the lid during cooking.
- After 20 minutes, turn off the heat and let the pot sit, covered, for an additional 10 minutes to allow the rice to absorb the remaining liquid.
- Fluff the rice gently with a fork, and stir in the chopped green onions before serving.
