Ingredients
- Cauliflower - 300 grams
- Chicken thighs (boneless, skinless) - 200 grams
- Shiitake mushrooms (dried) - 20 grams
- Garlic (minced) - 2 cloves
- Ginger (grated) - 1 teaspoon
- Coconut aminos - 2 tablespoons
- Sesame oil - 1 tablespoon
- Green onions (sliced) - 2 stalks
- Salt - to taste
- Pepper - to taste
- Water - 250 ml
Steps
- Soak the dried shiitake mushrooms in warm water for about 15 minutes until rehydrated, then slice them thinly.
- Cut the chicken thighs into bite-sized pieces and season with salt and pepper.
- In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
- Add the chicken pieces to the skillet and cook until browned and cooked through, about 5-7 minutes.
- Stir in the sliced shiitake mushrooms and cook for an additional 3 minutes.
- Add the coconut aminos and water to the skillet, bringing it to a simmer.
- While the chicken mixture is simmering, prepare the cauliflower rice by grating the cauliflower or using a food processor until it resembles rice grains.
- Add the cauliflower rice to the skillet, mixing it well with the chicken and mushroom mixture. Cover and cook for another 5-7 minutes, until the cauliflower is tender.
- Remove from heat, garnish with sliced green onions, and adjust seasoning with salt and pepper if needed.
