Ingredients

  • Cauliflower - 300 grams
  • Chicken thighs (boneless, skinless) - 200 grams
  • Shiitake mushrooms (dried) - 20 grams
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Coconut aminos - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Green onions (sliced) - 2 stalks
  • Salt - to taste
  • Pepper - to taste
  • Water - 250 ml

Steps

  1. Soak the dried shiitake mushrooms in warm water for about 15 minutes until rehydrated, then slice them thinly.
  2. Cut the chicken thighs into bite-sized pieces and season with salt and pepper.
  3. In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  4. Add the chicken pieces to the skillet and cook until browned and cooked through, about 5-7 minutes.
  5. Stir in the sliced shiitake mushrooms and cook for an additional 3 minutes.
  6. Add the coconut aminos and water to the skillet, bringing it to a simmer.
  7. While the chicken mixture is simmering, prepare the cauliflower rice by grating the cauliflower or using a food processor until it resembles rice grains.
  8. Add the cauliflower rice to the skillet, mixing it well with the chicken and mushroom mixture. Cover and cook for another 5-7 minutes, until the cauliflower is tender.
  9. Remove from heat, garnish with sliced green onions, and adjust seasoning with salt and pepper if needed.
  10. Serve warm and enjoy your Tori Gohan!
