Ingredients
- Udon noodles - 200 grams
- Dried shiitake mushrooms - 30 grams
- Fresh shiitake mushrooms - 100 grams, sliced
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, grated
- Miso paste - 2 tablespoons (white or yellow)
- Soy sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Vegetable broth - 750 milliliters
- Spinach - 100 grams
- Carrot - 1 medium, julienned
- Green onions - 2, sliced
- Sesame seeds - 1 tablespoon, toasted
- Tofu - 150 grams, cubed
Steps
- Soak the dried shiitake mushrooms in 250ml of warm water for 20 minutes until softened. Drain and reserve the soaking liquid.
- In a pot, heat sesame oil over medium heat. Add minced garlic and grated ginger, and sauté until fragrant, about 1 minute.
- Add the fresh shiitake mushrooms and cook until they are tender, about 3-4 minutes.
- Stir in the miso paste and soy sauce, mixing well to combine with the mushrooms.
- Add the vegetable broth and the reserved mushroom soaking liquid to the pot. Bring to a simmer.
- Once simmering, add the soaked shiitake mushrooms, carrot, and tofu. Cook for another 5 minutes.
- Meanwhile, cook the udon noodles according to package instructions. Drain and set aside.
- Add the spinach to the broth and cook for an additional 2 minutes until wilted.
- To serve, divide the udon noodles into bowls, ladle the hot broth and toppings over the noodles, and garnish with sliced green onions and toasted sesame seeds.
