Ingredients

  • Wheat noodles (tsukemen) - 200 grams
  • Pork belly (sliced) - 150 grams
  • Chicken breast (diced) - 100 grams
  • Pork bones - 500 grams
  • Water - 1.5 liters
  • Soy sauce - 60 ml
  • Miso paste - 30 grams
  • Mirin - 30 ml
  • Sake - 30 ml
  • Garlic (minced) - 2 cloves
  • Ginger (sliced) - 1 piece (about 1 inch)
  • Green onions (sliced) - 2 stalks
  • Sesame oil - 1 tablespoon
  • Salt - to taste
  • Nori (seaweed) - for garnish

Steps

  1. Start by boiling the pork bones in a large pot of water for about 10 minutes to remove impurities, then drain and rinse the bones.
  2. Add the cleaned pork bones, 1.5 liters of water, garlic, and ginger back into the pot. Bring to a boil, then reduce heat and simmer for about 2 hours, skimming off any scum.
  3. After 2 hours, remove the bones and strain the broth to remove solids. Return the broth to the pot and add the sliced pork belly, simmering for another 30 minutes until tender.
  4. In a separate pan, heat the sesame oil over medium heat. Add the diced chicken breast and cook until browned and cooked through, about 5-7 minutes. Set aside.
  5. In a bowl, combine soy sauce, miso paste, mirin, and sake to create the dipping sauce. Adjust the taste with salt if needed.
  6. Cook the tsukemen noodles according to package instructions, usually boiling for about 5-7 minutes. Drain and rinse under cold water to stop the cooking process.
  7. To serve, place the noodles on a plate, arrange the cooked pork belly and chicken on top, and garnish with sliced green onions and nori. Serve with the dipping sauce on the side.
