Ingredients
- Wheat noodles (tsukemen) - 200 grams
- Pork belly (sliced) - 150 grams
- Chicken breast (diced) - 100 grams
- Pork bones - 500 grams
- Water - 1.5 liters
- Soy sauce - 60 ml
- Miso paste - 30 grams
- Mirin - 30 ml
- Sake - 30 ml
- Garlic (minced) - 2 cloves
- Ginger (sliced) - 1 piece (about 1 inch)
- Green onions (sliced) - 2 stalks
- Sesame oil - 1 tablespoon
- Salt - to taste
- Nori (seaweed) - for garnish
Steps
- Start by boiling the pork bones in a large pot of water for about 10 minutes to remove impurities, then drain and rinse the bones.
- Add the cleaned pork bones, 1.5 liters of water, garlic, and ginger back into the pot. Bring to a boil, then reduce heat and simmer for about 2 hours, skimming off any scum.
- After 2 hours, remove the bones and strain the broth to remove solids. Return the broth to the pot and add the sliced pork belly, simmering for another 30 minutes until tender.
- In a separate pan, heat the sesame oil over medium heat. Add the diced chicken breast and cook until browned and cooked through, about 5-7 minutes. Set aside.
- In a bowl, combine soy sauce, miso paste, mirin, and sake to create the dipping sauce. Adjust the taste with salt if needed.
- Cook the tsukemen noodles according to package instructions, usually boiling for about 5-7 minutes. Drain and rinse under cold water to stop the cooking process.
- To serve, place the noodles on a plate, arrange the cooked pork belly and chicken on top, and garnish with sliced green onions and nori. Serve with the dipping sauce on the side.
