Ingredients

  • pork bones - 500 grams
  • water - 1.5 liters
  • soy sauce - 3 tablespoons
  • mirin - 2 tablespoons
  • miso paste - 1 tablespoon
  • garlic - 3 cloves, minced
  • ginger - 1-inch piece, sliced
  • green onions - 2, chopped
  • ramen noodles - 200 grams
  • shiitake mushrooms - 100 grams, sliced
  • bok choy - 100 grams, halved
  • sesame oil - 1 tablespoon
  • nori seaweed - 2 sheets, cut into strips
  • toasted sesame seeds - 1 tablespoon

Steps

  1. In a large pot, combine the pork bones, water, garlic, ginger, and green onions. Bring to a boil, then reduce heat and simmer for 2 hours, skimming any impurities from the surface.
  2. After 2 hours, remove the bones and strain the broth to remove solids. Return the broth to the pot and add soy sauce, mirin, and miso paste. Stir well and simmer for another 30 minutes.
  3. While the broth simmers, cook the ramen noodles according to package instructions. Drain and set aside.
  4. In a separate pan, heat sesame oil over medium heat. Sauté the shiitake mushrooms and bok choy until softened, about 5 minutes.
  5. To serve, divide the cooked ramen noodles into bowls. Ladle the hot broth over the noodles, then top with sautéed mushrooms, bok choy, nori strips, and toasted sesame seeds.
