Ingredients

  • Pork loin (1.5 cm thick) - 2 pieces (about 250g each)
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • All-purpose flour - 1/2 cup
  • Egg - 1 large
  • Panko breadcrumbs - 1 cup
  • Vegetable oil - 1 cup (for frying)
  • Tonkatsu sauce - 4 tablespoons
  • Shredded cabbage - 2 cups

Steps

  1. 1. Season both sides of the pork loin pieces with salt and black pepper.
  2. 2. Set up a breading station with three shallow bowls: one with flour, one with a beaten egg, and one with panko breadcrumbs.
  3. 3. Dredge each pork piece in flour, shaking off excess, then dip into the egg, and finally coat with panko breadcrumbs, pressing gently to adhere.
  4. 4. Heat vegetable oil in a heavy skillet over medium heat until hot (about 170°C or 340°F).
  5. 5. Carefully add the breaded pork to the skillet and fry for about 4-5 minutes on each side, or until golden brown and cooked through.
  6. 6. Remove the cutlets and place them on a paper towel-lined plate to drain excess oil.
  7. 7. Slice the tonkatsu into strips and serve with tonkatsu sauce drizzled over the top, alongside a generous serving of shredded cabbage.
