- Pork loin (1.5 cm thick) - 2 pieces (about 250g each)
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- All-purpose flour - 1/2 cup
- Egg - 1 large
- Panko breadcrumbs - 1 cup
- Vegetable oil - 1 cup (for frying)
- Tonkatsu sauce - 4 tablespoons
- Shredded cabbage - 2 cups
Steps
- 1. Season both sides of the pork loin pieces with salt and black pepper.
- 2. Set up a breading station with three shallow bowls: one with flour, one with a beaten egg, and one with panko breadcrumbs.
- 3. Dredge each pork piece in flour, shaking off excess, then dip into the egg, and finally coat with panko breadcrumbs, pressing gently to adhere.
- 4. Heat vegetable oil in a heavy skillet over medium heat until hot (about 170°C or 340°F).
- 5. Carefully add the breaded pork to the skillet and fry for about 4-5 minutes on each side, or until golden brown and cooked through.
- 6. Remove the cutlets and place them on a paper towel-lined plate to drain excess oil.
- 7. Slice the tonkatsu into strips and serve with tonkatsu sauce drizzled over the top, alongside a generous serving of shredded cabbage.
