Ingredients

  • Pork loin - 250 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • All-purpose flour - 1/4 cup
  • Egg - 1 large
  • Panko breadcrumbs - 1 cup
  • Vegetable oil - 1 cup (for frying)
  • Tonkatsu sauce - 4 tablespoons
  • Cabbage - 100 grams, finely shredded
  • Lemon wedges - 2 slices

Steps

  1. Start by tenderizing the pork loin with a meat mallet until it's about 1 cm thick. Season both sides with salt and black pepper.
  2. Set up a breading station: in one plate, place the all-purpose flour; in another, beat the egg; and in a third, place the panko breadcrumbs.
  3. Coat each pork piece first in flour, then dip into the beaten egg, and finally coat with panko breadcrumbs, ensuring an even layer.
  4. Heat the vegetable oil in a frying pan over medium heat until hot. Carefully place the breaded pork cutlets in the oil and fry for 4-5 minutes on each side, or until golden brown and cooked through.
  5. Once cooked, transfer the pork to a paper towel-lined plate to drain excess oil. Let rest for a couple of minutes.
  6. To serve, slice the tonkatsu into strips and arrange on a plate with shredded cabbage, a drizzle of tonkatsu sauce, and lemon wedges on the side.
