- Pork loin - 250 grams
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- All-purpose flour - 1/4 cup
- Egg - 1 large
- Panko breadcrumbs - 1 cup
- Vegetable oil - 1 cup (for frying)
- Tonkatsu sauce - 4 tablespoons
- Cabbage - 100 grams, finely shredded
- Lemon wedges - 2 slices
Steps
- Start by tenderizing the pork loin with a meat mallet until it's about 1 cm thick. Season both sides with salt and black pepper.
- Set up a breading station: in one plate, place the all-purpose flour; in another, beat the egg; and in a third, place the panko breadcrumbs.
- Coat each pork piece first in flour, then dip into the beaten egg, and finally coat with panko breadcrumbs, ensuring an even layer.
- Heat the vegetable oil in a frying pan over medium heat until hot. Carefully place the breaded pork cutlets in the oil and fry for 4-5 minutes on each side, or until golden brown and cooked through.
- Once cooked, transfer the pork to a paper towel-lined plate to drain excess oil. Let rest for a couple of minutes.
- To serve, slice the tonkatsu into strips and arrange on a plate with shredded cabbage, a drizzle of tonkatsu sauce, and lemon wedges on the side.
