Ingredients
- Pizza dough - 200 grams
- Pork loin (boneless) - 200 grams
- Panko breadcrumbs - 100 grams
- All-purpose flour - 50 grams
- Egg - 1 large
- Vegetable oil - 50 ml
- Tonkatsu sauce - 50 ml
- Mozzarella cheese - 150 grams
- Green onions - 2 stalks
- Shredded cabbage - 50 grams
- Soy sauce - 1 teaspoon
- Black pepper - to taste
Steps
- Preheat the oven to 220°C (428°F).
- Flatten the pork loin with a meat mallet until about 1 cm thick, season with soy sauce and black pepper.
- Set up a breading station with three separate bowls: one with flour, one with beaten egg, and one with panko breadcrumbs.
- Coat the pork in flour, dip it in the egg, and then coat it with panko breadcrumbs, pressing gently to adhere.
- In a skillet, heat vegetable oil over medium heat, and fry the breaded pork for about 3-4 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.
- Roll out the pizza dough on a floured surface to your desired thickness, then transfer it to a pizza stone or baking sheet.
- Spread a thin layer of tonkatsu sauce over the dough, leaving a border for the crust.
- Sprinkle mozzarella cheese evenly over the sauce.
- Slice the fried tonkatsu into strips and place them on top of the cheese.
- Bake in the preheated oven for 12-15 minutes or until the crust is golden and the cheese is bubbling.
- Once out of the oven, top with shredded cabbage and chopped green onions.
- Drizzle a little more tonkatsu sauce over the top before slicing and serving.
