Ingredients

  • Pizza dough - 200 grams
  • Pork loin (boneless) - 200 grams
  • Panko breadcrumbs - 100 grams
  • All-purpose flour - 50 grams
  • Egg - 1 large
  • Vegetable oil - 50 ml
  • Tonkatsu sauce - 50 ml
  • Mozzarella cheese - 150 grams
  • Green onions - 2 stalks
  • Shredded cabbage - 50 grams
  • Soy sauce - 1 teaspoon
  • Black pepper - to taste

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Flatten the pork loin with a meat mallet until about 1 cm thick, season with soy sauce and black pepper.
  3. Set up a breading station with three separate bowls: one with flour, one with beaten egg, and one with panko breadcrumbs.
  4. Coat the pork in flour, dip it in the egg, and then coat it with panko breadcrumbs, pressing gently to adhere.
  5. In a skillet, heat vegetable oil over medium heat, and fry the breaded pork for about 3-4 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.
  6. Roll out the pizza dough on a floured surface to your desired thickness, then transfer it to a pizza stone or baking sheet.
  7. Spread a thin layer of tonkatsu sauce over the dough, leaving a border for the crust.
  8. Sprinkle mozzarella cheese evenly over the sauce.
  9. Slice the fried tonkatsu into strips and place them on top of the cheese.
  10. Bake in the preheated oven for 12-15 minutes or until the crust is golden and the cheese is bubbling.
  11. Once out of the oven, top with shredded cabbage and chopped green onions.
  12. Drizzle a little more tonkatsu sauce over the top before slicing and serving.
