Ingredients
- Pasta (spaghetti or linguine) - 160 grams
- Ripe tomatoes - 300 grams, diced
- Fresh shiso leaves - 10 grams, chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Soy sauce - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese (optional) - 20 grams, grated
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Add the diced tomatoes to the skillet and cook for about 5 minutes, stirring occasionally, until the tomatoes begin to soften.
- Stir in the soy sauce, salt, and black pepper, and cook for an additional 2 minutes.
- Once the pasta is done, reserve 1/2 cup of the pasta water, then drain the pasta and add it to the skillet with the tomato mixture.
- Toss the pasta with the sauce, adding reserved pasta water a little at a time until the desired consistency is reached.
- Remove from heat and gently fold in the chopped shiso leaves.
- Serve hot, garnished with grated Parmesan cheese if desired.
