Ingredients

  • Pasta (spaghetti or linguine) - 160 grams
  • Ripe tomatoes - 300 grams, diced
  • Fresh shiso leaves - 10 grams, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (optional) - 20 grams, grated

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the diced tomatoes to the skillet and cook for about 5 minutes, stirring occasionally, until the tomatoes begin to soften.
  4. Stir in the soy sauce, salt, and black pepper, and cook for an additional 2 minutes.
  5. Once the pasta is done, reserve 1/2 cup of the pasta water, then drain the pasta and add it to the skillet with the tomato mixture.
  6. Toss the pasta with the sauce, adding reserved pasta water a little at a time until the desired consistency is reached.
  7. Remove from heat and gently fold in the chopped shiso leaves.
  8. Serve hot, garnished with grated Parmesan cheese if desired.
