  • Shiitake mushrooms - 100 grams, sliced
  • Carrot - 1 medium, julienned
  • Zucchini - 1 medium, sliced
  • Spring onions - 2, chopped
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Fresh basil - a handful, for garnish
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a large pot, heat the sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant, about 1-2 minutes.
  2. Add the chopped tomatoes to the pot and cook for another 3-4 minutes until they begin to break down.
  3. Pour in the vegetable broth and bring the mixture to a simmer.
  4. Add the soy sauce, carrot, zucchini, and shiitake mushrooms to the pot. Simmer for about 10 minutes until the vegetables are tender.
  5. Gently add the cubed tofu and cook for an additional 5 minutes to heat through.
