Ingredients

  • Udon noodles - 200 grams
  • Chicken breast, diced - 150 grams
  • Shrimp, peeled and deveined - 100 grams
  • Mushrooms, sliced - 100 grams
  • Vegetable broth - 500 ml
  • Coconut milk - 100 ml
  • Tom Yum paste - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Sugar - 1 teaspoon
  • Garlic, minced - 2 cloves
  • Fresh cilantro, chopped - 2 tablespoons
  • Lime wedges for garnish - 2

Steps

  1. In a pot, bring the vegetable broth to a simmer over medium heat.
  2. Add the Tom Yum paste and stir until dissolved, then add the minced garlic and cook for 1-2 minutes until fragrant.
  3. Add the diced chicken breast to the pot and cook for about 5 minutes until it starts to turn white.
  4. Stir in the coconut milk, shrimp, and sliced mushrooms, and cook for an additional 5-7 minutes until the shrimp turn pink and the chicken is fully cooked.
  5. While the soup is cooking, bring a separate pot of water to a boil and cook the udon noodles according to package instructions, usually about 5 minutes.
  6. Drain the udon noodles and divide them into two bowls.
  7. Once the soup is ready, stir in the lime juice, fish sauce, and sugar, adjusting to taste.
  8. Ladle the hot Tom Yum soup over the udon noodles in each bowl.
  9. Garnish with chopped cilantro and serve with lime wedges on the side.
