Steps
- In a pot, bring the chicken broth to a simmer and add chopped lemongrass, torn kaffir lime leaves, sliced galangal, and bird's eye chili. Let it simmer for 10 minutes to infuse the flavors.
- Add the sliced chicken breast to the pot and cook for about 5-7 minutes until the chicken is cooked through.
- Stir in the coconut milk and fish sauce, and let the soup simmer for another 5 minutes.
- Meanwhile, cook the gluten-free ramen noodles according to package instructions. Drain and set aside.
