  • Thai bird's eye chili - 2, sliced (adjust for heat)
  • fish sauce - 2 tablespoons
  • lime juice - 2 tablespoons
  • fresh cilantro - 1/4 cup, chopped
  • green onions - 2, sliced
  • bean sprouts - 100 grams

Steps

  1. In a pot, bring the chicken broth to a simmer and add chopped lemongrass, torn kaffir lime leaves, sliced galangal, and bird's eye chili. Let it simmer for 10 minutes to infuse the flavors.
  2. Add the sliced chicken breast to the pot and cook for about 5-7 minutes until the chicken is cooked through.
  3. Stir in the coconut milk and fish sauce, and let the soup simmer for another 5 minutes.
  4. Meanwhile, cook the gluten-free ramen noodles according to package instructions. Drain and set aside.
  5. Once the broth is ready, add the sliced mushrooms and cook for an additional 2-3 minutes until they are tender.
  6. Remove the pot from heat, then stir in lime juice and adjust seasoning if necessary.
