Ingredients

  • Shirataki noodles - 200 grams
  • Firm tofu - 150 grams, cubed
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Green onions - 2, chopped
  • Carrot - 1 medium, julienned
  • Red bell pepper - 1/2, sliced
  • Spinach - 50 grams, fresh
  • Sesame seeds - 1 tablespoon, for garnish

Steps

  1. Rinse the shirataki noodles under cold water for 2-3 minutes and drain well.
  2. In a non-stick skillet, heat the sesame oil over medium heat and add the minced garlic. Sauté for 1 minute until fragrant.
  3. Add the cubed tofu to the skillet and cook for about 5 minutes, turning occasionally until golden brown.
  4. Stir in the soy sauce, followed by the julienned carrot and sliced red bell pepper. Sauté for another 3-4 minutes until the vegetables are slightly tender.
  5. Add the shirataki noodles and fresh spinach to the skillet, tossing everything together. Cook for an additional 2-3 minutes until heated through.
  6. Garnish with chopped green onions and sesame seeds before serving.
