- Shirataki noodles - 200 grams
- Firm tofu - 150 grams, cubed
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Green onions - 2, chopped
- Carrot - 1 medium, julienned
- Red bell pepper - 1/2, sliced
- Spinach - 50 grams, fresh
- Sesame seeds - 1 tablespoon, for garnish
Steps
- Rinse the shirataki noodles under cold water for 2-3 minutes and drain well.
- In a non-stick skillet, heat the sesame oil over medium heat and add the minced garlic. Sauté for 1 minute until fragrant.
- Add the cubed tofu to the skillet and cook for about 5 minutes, turning occasionally until golden brown.
- Stir in the soy sauce, followed by the julienned carrot and sliced red bell pepper. Sauté for another 3-4 minutes until the vegetables are slightly tender.
- Add the shirataki noodles and fresh spinach to the skillet, tossing everything together. Cook for an additional 2-3 minutes until heated through.
- Garnish with chopped green onions and sesame seeds before serving.
