- Red bell pepper - 1, diced
- Zucchini - 1 small, diced
- Broccoli florets - 100 grams
- Sesame seeds - 1 tablespoon, for garnish
Steps
- Preheat the oven to 180°C (350°F).
- Drain the tofu and press it between paper towels to remove excess moisture, then cut it into bite-sized cubes.
- In a bowl, mix the miso paste, soy sauce, sesame oil, minced garlic, and grated ginger to create a marinade.
- Add the tofu cubes to the marinade and gently toss to coat. Let it marinate for at least 15 minutes.
- While the tofu is marinating, prepare the vegetables: dice the red bell pepper, zucchini, and cut the broccoli into small florets.
- In a baking dish, combine the marinated tofu and the chopped vegetables; mix them gently to distribute evenly.
- Bake in the preheated oven for 25-30 minutes, or until the tofu is slightly golden and the vegetables are tender.
- Remove from the oven and sprinkle with sliced green onions and sesame seeds before serving.
