- Chicken breast - 250 grams
- Coconut aminos - 3 tablespoons
- Honey - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Garlic - 1 clove, minced
- Ginger - 1 teaspoon, grated
- Cauliflower - 250 grams (for flatbread)
- Egg - 1 large
- Almond flour - 50 grams
- Olive oil - 1 tablespoon (for cooking)
- Green onions - 2, finely chopped
- Sesame seeds - 1 tablespoon (for garnish)

Steps
- Preheat the oven to 200°C (390°F).
- In a bowl, mix coconut aminos, honey, rice vinegar, minced garlic, and grated ginger to create the teriyaki marinade.
- Cut the chicken breast into bite-sized pieces and marinate them in the teriyaki sauce for at least 15 minutes.
- While the chicken is marinating, prepare the flatbread: steam or microwave the cauliflower until tender, then drain and blend it in a food processor until smooth.
- In a mixing bowl, combine the cauliflower puree, almond flour, and egg, seasoning with salt and pepper to taste. Mix until a dough forms.
- Spread the dough onto a baking sheet lined with parchment paper, shaping it into a flatbread about 1/2 cm thick.
- Bake the flatbread in the preheated oven for 10-12 minutes until golden and firm.
- In a skillet, heat the olive oil over medium heat. Add the marinated chicken and cook until fully cooked and caramelized, about 7-10 minutes.
- Once the flatbread is done, remove it from the oven and top it with the cooked teriyaki chicken. Sprinkle with chopped green onions and sesame seeds.
- Slice and serve warm, enjoying the delightful combination of flavors.
