Ingredients

  • Chicken breast - 250 grams
  • Coconut aminos - 3 tablespoons
  • Honey - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Cauliflower - 250 grams (for flatbread)
  • Egg - 1 large
  • Almond flour - 50 grams
  • Olive oil - 1 tablespoon (for cooking)
  • Green onions - 2, finely chopped
  • Sesame seeds - 1 tablespoon (for garnish)
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat the oven to 200°C (390°F).
  2. In a bowl, mix coconut aminos, honey, rice vinegar, minced garlic, and grated ginger to create the teriyaki marinade.
  3. Cut the chicken breast into bite-sized pieces and marinate them in the teriyaki sauce for at least 15 minutes.
  4. While the chicken is marinating, prepare the flatbread: steam or microwave the cauliflower until tender, then drain and blend it in a food processor until smooth.
  5. In a mixing bowl, combine the cauliflower puree, almond flour, and egg, seasoning with salt and pepper to taste. Mix until a dough forms.
  6. Spread the dough onto a baking sheet lined with parchment paper, shaping it into a flatbread about 1/2 cm thick.
  7. Bake the flatbread in the preheated oven for 10-12 minutes until golden and firm.
  8. In a skillet, heat the olive oil over medium heat. Add the marinated chicken and cook until fully cooked and caramelized, about 7-10 minutes.
  9. Once the flatbread is done, remove it from the oven and top it with the cooked teriyaki chicken. Sprinkle with chopped green onions and sesame seeds.
  10. Slice and serve warm, enjoying the delightful combination of flavors.
