Ingredients

  • Chicken breast - 250 grams
  • Soy sauce - 30 ml
  • Mirin - 30 ml
  • Honey - 15 grams
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Sesame oil - 1 teaspoon
  • Whole wheat burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1 medium, sliced
  • Cucumber - 1 small, sliced
  • Green onions - 2, chopped
  • Sesame seeds - 1 teaspoon, for garnish

Steps

  1. In a bowl, combine soy sauce, mirin, honey, minced garlic, grated ginger, and sesame oil to create the teriyaki marinade.
  2. Place the chicken breast in the marinade and let it sit for at least 15 minutes (or up to 2 hours in the refrigerator for more flavor).
  3. Preheat a grill or stovetop grill pan over medium heat.
  4. Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until the internal temperature reaches 75°C (165°F).
  5. While the chicken is grilling, lightly toast the whole wheat burger buns on the grill for 1-2 minutes until golden.
  6. Once cooked, let the chicken rest for a couple of minutes, then slice it into strips.
  7. Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by grilled chicken strips, tomato slices, cucumber slices, and chopped green onions.
