Ingredients

  • Chicken breast - 300 grams
  • Soy sauce (kosher) - 60 ml
  • Mirin (kosher) - 30 ml
  • Brown sugar - 15 grams
  • Garlic (minced) - 1 clove
  • Ginger (grated) - 1 teaspoon
  • Sesame oil - 1 tablespoon
  • Cornstarch - 1 teaspoon
  • Water - 60 ml
  • Sesame seeds - 1 tablespoon
  • Green onion (chopped) - 2 tablespoons
  • Cooked white rice - 200 grams (for serving)

Steps

  1. In a mixing bowl, combine soy sauce, mirin, brown sugar, garlic, ginger, and sesame oil to create the marinade.
  2. Cut the chicken breast into bite-sized pieces and add it to the marinade. Cover and refrigerate for at least 15 minutes.
  3. In a small saucepan, combine the remaining marinade, cornstarch, and water. Bring to a simmer over medium heat, stirring until the sauce thickens. Remove from heat and set aside.
  4. Heat a non-stick skillet over medium-high heat. Add the marinated chicken (discard the used marinade) and cook for about 5-7 minutes until cooked through and browned on all sides.
  5. Pour the thickened teriyaki sauce over the chicken and cook for an additional 2-3 minutes, stirring to coat the chicken evenly.
  6. Serve the teriyaki chicken over cooked white rice, garnished with sesame seeds and chopped green onions.
