Ingredients

  • Jasmine rice - 150 grams
  • Water - 300 ml
  • Shrimp (peeled and deveined) - 100 grams
  • Sweet potato (sliced thin) - 100 grams
  • Zucchini (sliced thin) - 100 grams
  • Carrot (sliced thin) - 100 grams
  • Tempura batter mix - 50 grams
  • Cold water - 100 ml
  • Soy sauce (kosher) - 30 ml
  • Mirin (kosher) - 15 ml
  • Sugar - 5 grams
  • Green onions (sliced for garnish) - 10 grams
  • Oil (for frying) - 500 ml

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then combine with 300 ml of water in a pot. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed.
  2. While the rice cooks, prepare the tempura batter by mixing 50 grams of tempura batter mix with 100 ml of cold water until smooth.
  3. Heat oil in a deep pan or fryer to 180°C (350°F). Dip the shrimp and vegetable slices into the tempura batter, allowing excess to drip off, then carefully place them in the hot oil.
  4. Fry the tempura for about 2-3 minutes or until golden brown and crispy. Remove and drain on paper towels.
  5. In a small saucepan, combine soy sauce, mirin, and sugar, and heat until the sugar dissolves to create the sauce.
  6. Once the rice is cooked, fluff it with a fork and divide it evenly between two bowls. Top each bowl with an assortment of tempura shrimp and vegetables.
  7. Drizzle the sauce over the tempura and garnish with sliced green onions. Serve immediately.
