Ingredients

  • Pizza dough - 200 grams
  • All-purpose flour - 100 grams
  • Cornstarch - 50 grams
  • Cold water - 150 ml
  • Vegetable oil (for frying) - 500 ml
  • Zucchini - 100 grams, sliced
  • Sweet potato - 100 grams, thinly sliced
  • Bell pepper - 100 grams, sliced
  • Mushrooms - 100 grams, sliced
  • Miso paste - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Maple syrup - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Fresh basil leaves - for garnish

Steps

  1. Preheat your oven to 220°C (428°F).
  2. Roll out the pizza dough on a floured surface to your desired thickness and shape, then place it on a baking sheet lined with parchment paper.
  3. In a bowl, mix the all-purpose flour, cornstarch, and a pinch of salt. Gradually add the cold water while whisking until a smooth batter forms.
  4. Heat the vegetable oil in a deep pan over medium heat.
  5. Dip the sliced zucchini, sweet potato, bell pepper, and mushrooms into the batter, allowing excess to drip off.
  6. Carefully place the batter-coated vegetables into the hot oil, frying until golden and crispy (about 3-4 minutes). Work in batches if necessary.
  7. Remove the tempura vegetables and place them on paper towels to drain excess oil.
  8. In a small bowl, mix the miso paste, soy sauce, maple syrup, and sesame oil to create the sauce.
  9. Spread the miso sauce evenly over the rolled-out pizza dough.
  10. Arrange the tempura vegetables on top of the sauce.
  11. Bake the pizza in the preheated oven for 10-12 minutes or until the crust is golden.
  12. Remove from the oven and garnish with fresh basil leaves before slicing and serving.
