Ingredients
- Shrimp - 200 grams, peeled and deveined
- All-purpose flour - 50 grams
- Cornstarch - 30 grams
- Ice-cold water - 120 ml
- Panko breadcrumbs - 50 grams
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Burger buns - 2, preferably soft and slightly sweet
- Shredded cabbage - 50 grams
- Sliced cucumber - 50 grams
- Wasabi paste - 1 teaspoon
- Mayonnaise - 2 tablespoons
- Vegetable oil - for frying
Steps
- In a bowl, mix the wasabi paste and mayonnaise to create the wasabi mayo. Set aside.
- In a mixing bowl, combine the all-purpose flour, cornstarch, salt, and black pepper.
- Gradually add the ice-cold water to the flour mixture, stirring gently until just combined. Do not overmix; some lumps are okay.
- Heat vegetable oil in a deep pan to 180°C (350°F) for frying.
- Dredge each shrimp in the batter, allowing excess to drip off, then coat with panko breadcrumbs.
- Carefully place the breaded shrimp into the hot oil and fry for about 2-3 minutes or until golden brown and crispy. Remove and place on paper towels to drain excess oil.
- Toast the burger buns lightly in a pan or oven until golden.
- To assemble, spread a generous amount of wasabi mayo on the bottom half of each bun, add a layer of shredded cabbage, top with the crispy tempura shrimp, and finish with cucumber slices and the top half of the bun.
- Serve immediately with extra wasabi mayo on the side.
