- Water - 150ml
- Egg - 1 large
- Shrimp (peeled and deveined) - 100g
- Zucchini (sliced) - 50g
- Red bell pepper (sliced) - 50g
- Carrot (julienned) - 50g
- Tempura batter mix - 50g
- Vegetable oil (for frying) - 500ml
- Pizza sauce - 100g
- Mozzarella cheese (shredded) - 100g
- Chopped green onions - 2 tbsp
Steps
- In a mixing bowl, combine whole wheat flour, protein powder, baking powder, and salt.
- In another bowl, whisk together water and egg. Gradually add to the dry ingredients, stirring until a smooth batter forms.
- Heat vegetable oil in a deep pan over medium-high heat for frying.
- Dredge shrimp, zucchini, red bell pepper, and carrot in tempura batter mix, then dip into the batter prepared earlier.
- Carefully place the battered vegetables and shrimp into the hot oil and fry until golden brown, about 3-4 minutes. Drain on paper towels.
- Preheat your oven to 220°C (428°F).
- Spread pizza sauce evenly over the base of a baking sheet or pizza stone.
- Layer the fried tempura vegetables and shrimp on top of the sauce, then sprinkle mozzarella cheese evenly over everything.
- Bake in the oven for 10-12 minutes or until the cheese is bubbly and golden.
- Remove from the oven, garnish with chopped green onions, slice, and serve hot.
