Ingredients

  • Zucchini - 100g
  • Bell pepper - 100g
  • Shrimp (peeled and deveined) - 200g
  • Almond flour - 50g
  • Coconut flour - 25g
  • Egg - 1 large
  • Ice water - 100ml
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Oil for frying - 500ml (vegetable or coconut oil)

Steps

  1. Prepare the vegetables by slicing the zucchini and bell pepper into thin strips.
  2. In a bowl, combine almond flour, coconut flour, baking powder, salt, and pepper.
  3. In another bowl, whisk the egg and then add ice water to it.
  4. Gradually mix the dry ingredients into the egg and water mixture until just combined; do not overmix.
  5. Heat oil in a deep pan over medium-high heat until it reaches 180°C (350°F).
  6. Dip each vegetable and shrimp into the batter, allowing excess batter to drip off.
  7. Carefully place the battered vegetables and shrimp into the hot oil, frying in batches to avoid overcrowding.
  8. Fry for 2-3 minutes or until golden brown and crispy, turning halfway through.
  9. Remove from oil and place on paper towels to drain excess oil.
  10. Serve immediately with a keto-friendly dipping sauce or soy sauce.
