Ingredients
- Zucchini - 100g
- Bell pepper - 100g
- Shrimp (peeled and deveined) - 200g
- Almond flour - 50g
- Coconut flour - 25g
- Egg - 1 large
- Ice water - 100ml
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Oil for frying - 500ml (vegetable or coconut oil)
Steps
- Prepare the vegetables by slicing the zucchini and bell pepper into thin strips.
- In a bowl, combine almond flour, coconut flour, baking powder, salt, and pepper.
- In another bowl, whisk the egg and then add ice water to it.
- Gradually mix the dry ingredients into the egg and water mixture until just combined; do not overmix.
- Heat oil in a deep pan over medium-high heat until it reaches 180°C (350°F).
- Dip each vegetable and shrimp into the batter, allowing excess batter to drip off.
- Carefully place the battered vegetables and shrimp into the hot oil, frying in batches to avoid overcrowding.
- Fry for 2-3 minutes or until golden brown and crispy, turning halfway through.
- Remove from oil and place on paper towels to drain excess oil.
- Serve immediately with a keto-friendly dipping sauce or soy sauce.
