Ingredients

  • Soba noodles - 200 grams
  • Sesame paste (tahini) - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Chili oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Carrot - 1 medium, julienned
  • Cucumber - 1 medium, julienned
  • Spring onions - 2, chopped
  • Toasted sesame seeds - 1 tablespoon
  • Fresh cilantro - a handful, chopped
  • Water - 1 liter

Steps

  1. Bring 1 liter of water to a boil in a pot. Add the soba noodles and cook according to package instructions (usually about 4-5 minutes).
  2. Once cooked, drain the soba noodles and rinse them under cold water to stop the cooking process. Set aside.
  3. In a mixing bowl, combine the sesame paste, soy sauce, rice vinegar, chili oil, minced garlic, and grated ginger. Mix until smooth to create the sauce.
  4. In a large bowl, combine the cooked soba noodles with the sauce, tossing well to coat the noodles evenly.
  5. Add the julienned carrot, cucumber, and chopped spring onions to the noodle mixture. Toss gently to combine all the ingredients.
  6. Serve the Tan Tan Soba in bowls, garnished with toasted sesame seeds and fresh cilantro.
