Ingredients
- Soba noodles - 200 grams
- Sesame paste (tahini) - 2 tablespoons
- Soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Chili oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Carrot - 1 medium, julienned
- Cucumber - 1 medium, julienned
- Spring onions - 2, chopped
- Toasted sesame seeds - 1 tablespoon
- Fresh cilantro - a handful, chopped
- Water - 1 liter
Steps
- Bring 1 liter of water to a boil in a pot. Add the soba noodles and cook according to package instructions (usually about 4-5 minutes).
- Once cooked, drain the soba noodles and rinse them under cold water to stop the cooking process. Set aside.
- In a mixing bowl, combine the sesame paste, soy sauce, rice vinegar, chili oil, minced garlic, and grated ginger. Mix until smooth to create the sauce.
- In a large bowl, combine the cooked soba noodles with the sauce, tossing well to coat the noodles evenly.
- Add the julienned carrot, cucumber, and chopped spring onions to the noodle mixture. Toss gently to combine all the ingredients.
- Serve the Tan Tan Soba in bowls, garnished with toasted sesame seeds and fresh cilantro.
