- Soba noodles - 200 grams
- Sesame oil - 2 tablespoons

- Ginger - 1 tablespoon, grated
- Carrot - 1 medium, julienned
- Bell pepper - 1 medium, thinly sliced
- Scallions - 2, chopped
- Spinach - 100 grams, fresh
- Soy sauce - 3 tablespoons
- Tahini - 2 tablespoons
- Chili paste - 1 teaspoon (adjust to taste)
- Vegetable broth - 250 ml
- Sesame seeds - 1 tablespoon, toasted
- Lime - 1, juiced
Steps
- Cook the soba noodles according to package instructions. Drain and set aside.
- In a large pan, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
- Add the julienned carrot and sliced bell pepper to the pan and stir-fry for 3-4 minutes until they start to soften.
- Add the fresh spinach to the pan and cook until wilted, about 2 minutes.
- In a small bowl, mix the soy sauce, tahini, chili paste, and vegetable broth until well combined.
- Pour the sauce mixture into the pan with vegetables and stir to combine, letting it simmer for 2-3 minutes.
- Add the cooked soba noodles to the pan, tossing everything together until the noodles are evenly coated in the sauce.
- Remove from heat, and add lime juice and chopped scallions. Toss again.
- Serve hot, garnished with toasted sesame seeds.
