- Eggs - 4 large

- Mirin - 1 tablespoon
- Daikon radish (grated) - 2 tablespoons
- Green onions (chopped) - 2 tablespoons
- Mozzarella cheese (shredded) - 100 grams
- Cherry tomatoes (halved) - 100 grams
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a bowl, whisk together the eggs, soy sauce, mirin, salt, and pepper until well combined.
- Heat a non-stick skillet over medium heat and add a little olive oil.
- Pour a small amount of the egg mixture into the skillet, swirling to create a thin layer. Cook for about 1-2 minutes until set, then gently roll it up and push to one side of the skillet.
- Add more egg mixture to the skillet, lifting the rolled omelette to let the uncooked egg flow underneath. Repeat the rolling process until all the egg mixture is cooked and rolled into a tamagoyaki.
- Remove the tamagoyaki from the skillet and let it cool slightly, then slice into bite-sized pieces.
- In the same skillet, arrange the sliced tamagoyaki and sprinkle the mozzarella cheese on top.
- Add the halved cherry tomatoes and grated daikon on top of the cheese.
- Cover the skillet with a lid and cook on low heat for about 5-7 minutes, until the cheese is melted and bubbly.
- Garnish with chopped green onions before serving.
