Ingredients

  • Eggs - 4 large
  • Mirin - 1 tablespoon
  • Soy sauce (Halal) - 1 teaspoon
  • Sugar - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Vegetable oil - 1 tablespoon

Steps

  1. In a mixing bowl, whisk together the eggs, mirin, soy sauce, sugar, and salt until well combined and slightly frothy.
  2. Heat a non-stick skillet over medium-low heat and add half of the vegetable oil, spreading it evenly across the pan.
  3. Pour a small amount of the egg mixture (about 1/4 cup) into the skillet, tilting the pan to spread it evenly.
  4. Cook until the edges start to set, then gently lift the edges with a spatula and roll the omelette towards the far side of the pan.
  5. Add another small amount of oil to the pan and pour in another 1/4 cup of the egg mixture, making sure to lift the rolled omelette so the liquid can flow underneath.
  6. Cook until the edges set, then roll the omelette towards the far side again, repeating the process of layering and rolling until all the egg mixture is used.
  7. Once finished, remove the tamagoyaki from the pan and let it cool for a minute before slicing it into bite-sized pieces.
  8. Serve the tamagoyaki warm or at room temperature, garnished with sliced green onions or a drizzle of soy sauce if desired.
