Ingredients

  • Eggs - 4 large
  • Mirin - 1 tablespoon
  • Soy sauce - 1 teaspoon
  • Sugar - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Vegetable oil - 1 tablespoon
  • Green onion - 1 tablespoon, finely chopped (optional)

Steps

  1. In a mixing bowl, whisk together the eggs, mirin, soy sauce, sugar, salt, and finely chopped green onion until well combined.
  2. Heat a non-stick frying pan over medium-low heat and add half of the vegetable oil, spreading it evenly.
  3. Pour a quarter of the egg mixture into the pan, tilting it to spread it evenly across the surface.
  4. Cook for about 1-2 minutes, or until the edges begin to set but the surface is still slightly runny.
  5. Using a spatula, carefully roll the omelette away from you into a log shape, pushing it towards the edge of the pan.
  6. Add a little more oil to the pan, then pour another quarter of the egg mixture into the empty space, lifting the rolled omelette to let the new mixture flow underneath.
  7. Repeat the process of cooking, rolling, and adding more egg mixture until all the egg is used up.
  8. Once complete, remove the tamagoyaki from the pan and let it cool slightly before slicing it into bite-sized pieces.
  9. Serve warm or at room temperature, optionally garnished with additional green onion.
