- Eggs - 4 large
- Mirin - 1 tablespoon
- Soy sauce - 1 teaspoon
- Sugar - 1 teaspoon
- Salt - 1/4 teaspoon
- Vegetable oil - 1 tablespoon
- Green onion - 1 tablespoon, finely chopped (optional)
Steps
- In a mixing bowl, whisk together the eggs, mirin, soy sauce, sugar, salt, and finely chopped green onion until well combined.
- Heat a non-stick frying pan over medium-low heat and add half of the vegetable oil, spreading it evenly.
- Pour a quarter of the egg mixture into the pan, tilting it to spread it evenly across the surface.
- Cook for about 1-2 minutes, or until the edges begin to set but the surface is still slightly runny.
- Using a spatula, carefully roll the omelette away from you into a log shape, pushing it towards the edge of the pan.
- Add a little more oil to the pan, then pour another quarter of the egg mixture into the empty space, lifting the rolled omelette to let the new mixture flow underneath.
- Repeat the process of cooking, rolling, and adding more egg mixture until all the egg is used up.
- Once complete, remove the tamagoyaki from the pan and let it cool slightly before slicing it into bite-sized pieces.
- Serve warm or at room temperature, optionally garnished with additional green onion.
