Ingredients

  • Eggs - 4 large
  • Soy sauce - 1 tablespoon
  • Mirin - 1 tablespoon
  • Sugar - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Green onions - 2 tablespoons, finely chopped
  • Carrot - 1/4 cup, grated
  • Spinach - 1/2 cup, chopped
  • Sesame oil - 1 teaspoon
  • Nori (seaweed) - 1 sheet, cut into strips (optional)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, whisk together the eggs, soy sauce, mirin, sugar, and salt until well combined.
  3. Heat the sesame oil in a frying pan over medium heat, then add the grated carrot and chopped spinach. Sauté for 2-3 minutes until the vegetables are tender.
  4. Remove the pan from heat and fold the sautéed vegetables into the egg mixture along with the chopped green onions.
  5. Pour the combined mixture into a greased baking dish (about 20x20 cm).
  6. Bake in the preheated oven for 20-25 minutes, or until the egg is set and lightly golden on top.
  7. Remove from the oven and let cool for a few minutes. Cut into squares and serve, garnished with nori strips if desired.
