- Eggs - 4 large
- Soy sauce - 1 tablespoon
- Mirin - 1 tablespoon
- Sugar - 1 teaspoon
- Salt - 1/4 teaspoon
- Green onions - 2 tablespoons, finely chopped
- Carrot - 1/4 cup, grated
- Spinach - 1/2 cup, chopped
- Sesame oil - 1 teaspoon
- Nori (seaweed) - 1 sheet, cut into strips (optional)
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, whisk together the eggs, soy sauce, mirin, sugar, and salt until well combined.
- Heat the sesame oil in a frying pan over medium heat, then add the grated carrot and chopped spinach. Sauté for 2-3 minutes until the vegetables are tender.
- Remove the pan from heat and fold the sautéed vegetables into the egg mixture along with the chopped green onions.
- Pour the combined mixture into a greased baking dish (about 20x20 cm).
- Bake in the preheated oven for 20-25 minutes, or until the egg is set and lightly golden on top.
- Remove from the oven and let cool for a few minutes. Cut into squares and serve, garnished with nori strips if desired.
