  • Eggs - 4 large

  • Vegetable oil - 1 tablespoon
  • Bread (shokupan or other soft bread) - 4 slices
  • Mayonnaise - 2 tablespoons
  • Salt - a pinch
  • Black pepper - a pinch
  • Chives (optional) - 1 tablespoon, chopped

Steps

  1. In a bowl, whisk together the eggs, milk, soy sauce, sugar, salt, and black pepper until well combined.
  2. Heat a non-stick skillet over medium heat and add the vegetable oil, swirling to coat the pan.
  3. Pour half of the egg mixture into the skillet and cook gently, allowing the edges to set while gently pulling the cooked edges towards the center with a spatula.
  4. Once the omelet is mostly set but still slightly runny on top, fold it in half and cook for an additional minute. Remove from the skillet and repeat the process with the remaining egg mixture to make a second omelet.
  5. While the omelets are cooling, toast the bread slices to your desired level of crispiness.
  6. Spread mayonnaise on one side of each slice of bread.
  7. Place one omelet on two of the slices of bread with mayonnaise, and sprinkle with chopped chives if using.
  8. Top with the remaining slices of bread, mayonnaise side down, and cut the sandwiches in half to serve.
