Steps
- Rinse the Japanese short-grain rice under cold water until the water runs clear to remove excess starch.
- Combine the rinsed rice and 200 ml of water in a rice cooker or pot, and cook according to the rice cooker's instructions, or bring to a boil, then reduce to low heat, cover, and simmer for 15-18 minutes until the water is absorbed.
- While the rice is cooking, prepare the toppings: beat the fresh eggs in a bowl, then mix in the soy sauce and mirin until well combined.
- Once the rice is cooked, fluff it with a fork and divide it into two serving bowls.
- Pour the egg mixture over the hot rice in each bowl, mixing gently to combine.
