Ingredients

  • Japanese short-grain rice - 150 grams
  • Water - 200 ml
  • Fresh large egg - 2
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Chopped green onions - 2 tablespoons
  • Nori seaweed - 1 sheet, cut into strips
  • Sesame seeds - 1 tablespoon

Steps

  1. Rinse the Japanese short-grain rice under cold water until the water runs clear to remove excess starch.
  2. Combine the rinsed rice and 200 ml of water in a rice cooker or pot, and cook according to the rice cooker's instructions, or bring to a boil, then reduce to low heat, cover, and simmer for 15-18 minutes until the water is absorbed.
  3. While the rice is cooking, prepare the toppings: beat the fresh eggs in a bowl, then mix in the soy sauce and mirin until well combined.
  4. Once the rice is cooked, fluff it with a fork and divide it into two serving bowls.
  5. Pour the egg mixture over the hot rice in each bowl, mixing gently to combine.
  6. Top each bowl with chopped green onions, nori strips, and sesame seeds.
