- Japanese short-grain rice - 150 grams
- Water - 200 milliliters
- Eggs - 2 large
- Soy sauce - 1 tablespoon
- Mirin - 1 teaspoon
- Green onions - 1 tablespoon, finely chopped
- Sesame seeds - 1 teaspoon, toasted
- Salt - a pinch
Steps
- Rinse the Japanese short-grain rice under cold water until the water runs clear, then drain and place it in a rice cooker or pot.
- Add 200 milliliters of water to the rice and let it soak for about 20 minutes.
- Cook the rice according to the rice cooker's instructions, or bring the pot to a boil, then reduce to low heat, cover, and simmer for 15-18 minutes until the water is absorbed.
- While the rice is cooking, bring a small pot of water to a gentle boil. Carefully add the eggs and boil for 6 minutes for a soft-boiled texture.
- After 6 minutes, transfer the eggs to an ice bath to stop the cooking process. Once cool, peel the eggs and set aside.
- Once the rice is done, fluff it with a fork and season with soy sauce, mirin, and a pinch of salt. Mix well.
- Divide the rice into two bowls, and top each with a soft-boiled egg, breaking the egg open to let the yolk run over the rice.
- Garnish with finely chopped green onions and toasted sesame seeds before serving.
