Ingredients

  • Pickled daikon (takuan) - 100 grams, sliced

  • Cherry tomatoes - 100 grams, halved
  • Sesame seeds - 2 tablespoons, toasted
  • Soy sauce - 1 tablespoon
  • Rice vinegar - 2 teaspoons
  • Sesame oil - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped

Steps

  1. In a pot of boiling water, cook the edamame for 3-5 minutes until tender. Drain and rinse under cold water to stop the cooking process.
  2. In a large mixing bowl, combine the sliced pickled daikon, cooked edamame, julienned cucumber, and halved cherry tomatoes.
  3. In a small bowl, whisk together the soy sauce, rice vinegar, and sesame oil to create the dressing.
