Ingredients

  • All-purpose flour - 100 grams
  • Cornstarch - 20 grams
  • Baking powder - 1 teaspoon
  • Vegetable broth - 250 ml
  • Soy sauce - 1 tablespoon
  • Rice vinegar - 1 teaspoon
  • Mushrooms (finely chopped) - 50 grams
  • Green onions (finely chopped) - 30 grams
  • Carrot (grated) - 30 grams
  • Cabbage (finely shredded) - 50 grams
  • Tempura scraps (tenkasu) - 20 grams
  • Vegetable oil - for cooking
  • Takoyaki sauce - for drizzling
  • Japanese mayonnaise - for drizzling
  • Nori flakes - for garnish
  • Bonito flakes (optional) - for garnish

Steps

  1. In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and mix well.
  2. Gradually add the vegetable broth, soy sauce, and rice vinegar to the dry ingredients, whisking until smooth.
  3. Fold in the chopped mushrooms, green onions, grated carrot, shredded cabbage, and tempura scraps into the batter.
  4. Preheat a takoyaki pan over medium heat and lightly grease each mold with vegetable oil.
  5. Pour the batter into each mold, filling them to the top.
  6. Cook for about 2-3 minutes until the edges start to set, then use a skewer to turn the balls 90 degrees.
  7. Continue to cook, turning the balls every 2-3 minutes until they are golden brown and crispy on all sides, about 8-10 minutes total.
  8. Remove the takoyaki from the pan and place them on a plate.
  9. Drizzle with takoyaki sauce and Japanese mayonnaise, then sprinkle with nori flakes and bonito flakes if using.
  10. Serve hot and enjoy!
