Ingredients

  • All-purpose flour - 100g
  • Cornstarch - 30g
  • Baking powder - 1 tsp
  • Vegetable broth - 300ml
  • Soy sauce - 1 tbsp
  • Nori flakes - 2 tbsp
  • Cooked and diced mushrooms (shiitake or oyster) - 100g
  • Grated carrot - 50g
  • Chopped green onions - 2 tbsp
  • Oil (for cooking) - 2 tbsp
  • Vegan takoyaki sauce - for serving
  • Vegan mayonnaise - for serving
  • Chopped pickled ginger - for garnish

Steps

  1. In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and nori flakes.
  2. Gradually add the vegetable broth and soy sauce to the dry ingredients, whisking until smooth.
  3. Fold in the diced mushrooms, grated carrot, and chopped green onions until evenly distributed.
  4. Preheat a takoyaki pan or a non-stick frying pan over medium heat and lightly grease each mold or cavity with oil.
  5. Pour the batter into each mold until almost full, allowing some overflow for the characteristic round shape.
  6. Cook for about 3-4 minutes or until the edges begin to set and the bottom is golden brown.
  7. Using a skewer or chopsticks, carefully turn each ball over to cook the other side, continuing to cook for another 3-4 minutes until golden and crispy.
  8. Remove the takoyaki from the pan and place them on a serving plate.
  9. Drizzle with vegan takoyaki sauce and vegan mayonnaise, then garnish with chopped pickled ginger.
