- Soy sauce - 1 tbsp
- Nori flakes - 2 tbsp
- Cooked and diced mushrooms (shiitake or oyster) - 100g
- Grated carrot - 50g
- Chopped green onions - 2 tbsp
- Oil (for cooking) - 2 tbsp
- Vegan takoyaki sauce - for serving
- Vegan mayonnaise - for serving
- Chopped pickled ginger - for garnish
Steps
- In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and nori flakes.
- Gradually add the vegetable broth and soy sauce to the dry ingredients, whisking until smooth.
- Fold in the diced mushrooms, grated carrot, and chopped green onions until evenly distributed.
- Preheat a takoyaki pan or a non-stick frying pan over medium heat and lightly grease each mold or cavity with oil.
- Pour the batter into each mold until almost full, allowing some overflow for the characteristic round shape.
- Cook for about 3-4 minutes or until the edges begin to set and the bottom is golden brown.
- Using a skewer or chopsticks, carefully turn each ball over to cook the other side, continuing to cook for another 3-4 minutes until golden and crispy.
- Remove the takoyaki from the pan and place them on a serving plate.
- Drizzle with vegan takoyaki sauce and vegan mayonnaise, then garnish with chopped pickled ginger.
