- Cornstarch - 30 grams (2 tablespoons)
- Vegetable broth - 60 milliliters (1/4 cup)
- Takoyaki sauce - 30 milliliters (2 tablespoons)
- Soy sauce - 15 milliliters (1 tablespoon)
- Green onions - 30 grams (1/4 cup, finely chopped)
- Nori (seaweed) - 5 grams (1 sheet, crumbled)
- Vegan mayonnaise - 60 grams (1/4 cup)
- Rice vinegar - 15 milliliters (1 tablespoon)
- Cabbage - 60 grams (1 cup, shredded)
- Burger buns - 2 pieces
- Oil (for frying) - 30 milliliters (2 tablespoons)
- Salt - to taste
- Black pepper - to taste
Steps
- In a mixing bowl, mash the canned chickpeas until mostly smooth, leaving some chunks for texture.
- Add all-purpose flour, cornstarch, vegetable broth, takoyaki sauce, soy sauce, chopped green onions, crumbled nori, salt, and black pepper to the bowl. Mix until well combined.
- Heat the oil in a non-stick skillet over medium heat. Form the chickpea mixture into two patties and cook for about 4-5 minutes on each side, or until golden brown.
- While the patties cook, prepare the slaw by combining shredded cabbage, vegan mayonnaise, rice vinegar, salt, and pepper in a separate bowl. Mix well and set aside.
- Once the patties are cooked, toast the burger buns lightly, if desired.
- Assemble the burgers by placing a patty on each bun, topping with the cabbage slaw, and adding any additional toppings if desired.
- Serve immediately and enjoy your Takoyaki-Inspired Burger!
