- All-purpose flour - 100 grams
- Dashi stock (vegan) - 300 milliliters
- Cornstarch - 1 tablespoon
- Soy sauce - 1 tablespoon
- Salt - 1/4 teaspoon
- Egg - 1 large (optional for vegan, can substitute with 1 tablespoon ground flaxseed mixed with 3 tablespoons water)
- Cooked octopus, diced - 100 grams
- Green onions, finely chopped - 2 tablespoons
- Pickled ginger, finely chopped - 1 tablespoon
- Vegetable oil - for cooking
- Takoyaki sauce (dairy-free) - for drizzling
- Vegan mayonnaise - for drizzling
- Bonito flakes (optional, for garnish) - to taste
- Aonori (dried seaweed flakes) - for garnish
Steps
- In a mixing bowl, combine the all-purpose flour, cornstarch, salt, and pour in the dashi stock gradually while whisking to create a smooth batter.
- If using, add the egg or flaxseed mixture to the batter and mix well until fully incorporated.
- Preheat a takoyaki pan on medium heat and lightly grease each mold with vegetable oil.
- Pour the batter into the molds, filling them about 3/4 full.
- Add a few pieces of diced octopus, green onions, and pickled ginger into each mold.
- After about 2-3 minutes, when the edges start to set, use a skewer or chopsticks to turn the takoyaki balls 90 degrees.
- Continue cooking for another 3-4 minutes, rolling them occasionally until they are golden brown and cooked through.
- Remove the takoyaki from the pan and place them on a serving plate.
- Drizzle with takoyaki sauce and vegan mayonnaise, and sprinkle with bonito flakes and aonori for garnish.
- Serve hot and enjoy your delicious dairy-free takoyaki!
