Ingredients

  • Shiitake mushrooms - 150 grams, finely chopped
  • Chickpeas - 1 can (400 grams), drained and rinsed
  • Panko breadcrumbs - 50 grams
  • Green onions - 2, finely chopped
  • Nori seaweed - 1 sheet, finely shredded
  • Soy sauce - 2 tablespoons
  • Rice flour - 2 tablespoons
  • Vegetable oil - 2 tablespoons
  • Vegan mayo - 4 tablespoons
  • Takoyaki sauce - 4 tablespoons
  • Burger buns - 2, vegan
  • Lettuce leaves - 2, for serving
  • Pickled ginger - for garnish (optional)

Steps

  1. In a skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the chopped shiitake mushrooms and sauté for about 5 minutes until they are soft and browned.
  2. In a mixing bowl, combine the sautéed mushrooms, drained chickpeas, panko breadcrumbs, chopped green onions, shredded nori, soy sauce, and rice flour. Mash the mixture with a fork or potato masher until well combined but still a bit chunky.
  3. Divide the mixture into two equal portions and shape them into patties.
  4. In the same skillet, heat the remaining tablespoon of vegetable oil over medium heat. Add the patties and cook for about 4-5 minutes on each side until golden brown and crispy.
  5. While the patties cook, toast the burger buns until lightly golden.
  6. Assemble the burgers by spreading 2 tablespoons of vegan mayo on the bottom half of each bun. Place a lettuce leaf on top, followed by the mushroom patty. Drizzle with takoyaki sauce and add pickled ginger if desired. Top with the other half of the bun.
  7. Serve immediately and enjoy your Takoyaki Burger!
