Ingredients
- Shiitake mushrooms - 150 grams, finely chopped
- Chickpeas - 1 can (400 grams), drained and rinsed
- Panko breadcrumbs - 50 grams
- Green onions - 2, finely chopped
- Nori seaweed - 1 sheet, finely shredded
- Soy sauce - 2 tablespoons
- Rice flour - 2 tablespoons
- Vegetable oil - 2 tablespoons
- Vegan mayo - 4 tablespoons
- Takoyaki sauce - 4 tablespoons
- Burger buns - 2, vegan
- Lettuce leaves - 2, for serving
- Pickled ginger - for garnish (optional)
Steps
- In a skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the chopped shiitake mushrooms and sauté for about 5 minutes until they are soft and browned.
- In a mixing bowl, combine the sautéed mushrooms, drained chickpeas, panko breadcrumbs, chopped green onions, shredded nori, soy sauce, and rice flour. Mash the mixture with a fork or potato masher until well combined but still a bit chunky.
- Divide the mixture into two equal portions and shape them into patties.
- In the same skillet, heat the remaining tablespoon of vegetable oil over medium heat. Add the patties and cook for about 4-5 minutes on each side until golden brown and crispy.
- While the patties cook, toast the burger buns until lightly golden.
- Assemble the burgers by spreading 2 tablespoons of vegan mayo on the bottom half of each bun. Place a lettuce leaf on top, followed by the mushroom patty. Drizzle with takoyaki sauce and add pickled ginger if desired. Top with the other half of the bun.
