- All-purpose flour - 100 grams
- Cornstarch - 20 grams
- Baking powder - 1 teaspoon
- Water - 250 milliliters
- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon
- Vegetable oil - for frying
- Cooked octopus (or substitute with cooked mushrooms for vegetarian) - 100 grams, diced
- Green onions - 2, finely chopped
- Pickled ginger - 1 tablespoon, chopped
- Katsuobushi (dried bonito flakes) - 10 grams (optional, for garnish)
- Nori (seaweed) - 1 tablespoon, shredded (for garnish)
- Takoyaki sauce - for drizzling
- Mayonnaise - for drizzling
Steps
- In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, and water. Whisk until smooth and set aside.
- Heat a takoyaki pan or a non-stick frying pan over medium heat and brush it lightly with vegetable oil.
- Pour the batter into the mold or pan, filling each cavity halfway.
- Add diced octopus (or mushrooms), green onions, and pickled ginger to each cavity.
- Pour more batter on top to cover the fillings and allow to cook for about 3-4 minutes until the bottom is golden.
- Using a skewer or chopsticks, flip each ball to cook evenly on all sides, approximately 3-4 minutes more.
- Once golden brown and crispy, remove from the pan and place on a serving plate.
- Drizzle with takoyaki sauce and mayonnaise, and sprinkle with katsuobushi and shredded nori for garnish.
