Ingredients

  • All-purpose flour - 100 grams
  • Dashi stock (halal) - 300 ml
  • Egg - 1 large
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Cooked octopus (diced) - 100 grams
  • Green onions (finely chopped) - 2 tablespoons
  • Pickled ginger (finely chopped) - 1 tablespoon
  • Soy sauce (halal) - 1 tablespoon
  • Oil (for greasing the pan) - as needed
  • Takoyaki sauce - for drizzling
  • Japanese mayonnaise - for drizzling
  • Bonito flakes - for garnish
  • Aonori (dried seaweed flakes) - for garnish

Steps

  1. In a mixing bowl, combine the all-purpose flour, baking powder, and salt.
  2. In a separate bowl, whisk together the dashi stock and egg until well blended.
  3. Gradually pour the wet mixture into the dry ingredients, stirring until smooth.
  4. Preheat a takoyaki pan over medium heat and lightly grease each cavity with oil.
  5. Pour the batter into each cavity, filling them about 2/3 full.
  6. Add a small piece of diced octopus, a bit of chopped green onions, and pickled ginger into each ball.
  7. Allow the batter to cook for about 1-2 minutes until the edges start to set.
  8. Using skewers or chopsticks, gently turn each ball 90 degrees to allow the uncooked batter to flow into the cavity.
  9. Continue to turn the balls every 1-2 minutes until they are golden brown and crispy on all sides, about 8-10 minutes total.
  10. Remove the takoyaki from the pan and place them on a serving plate.
  11. Drizzle with takoyaki sauce and Japanese mayonnaise, then sprinkle with bonito flakes and aonori before serving.
