- Pickled ginger (finely chopped) - 1 tablespoon
- Soy sauce (halal) - 1 tablespoon
- Oil (for greasing the pan) - as needed
- Takoyaki sauce - for drizzling
- Japanese mayonnaise - for drizzling
- Bonito flakes - for garnish
- Aonori (dried seaweed flakes) - for garnish
Steps
- In a mixing bowl, combine the all-purpose flour, baking powder, and salt.
- In a separate bowl, whisk together the dashi stock and egg until well blended.
- Gradually pour the wet mixture into the dry ingredients, stirring until smooth.
- Preheat a takoyaki pan over medium heat and lightly grease each cavity with oil.
- Pour the batter into each cavity, filling them about 2/3 full.
- Add a small piece of diced octopus, a bit of chopped green onions, and pickled ginger into each ball.
- Allow the batter to cook for about 1-2 minutes until the edges start to set.
- Using skewers or chopsticks, gently turn each ball 90 degrees to allow the uncooked batter to flow into the cavity.
- Continue to turn the balls every 1-2 minutes until they are golden brown and crispy on all sides, about 8-10 minutes total.
- Remove the takoyaki from the pan and place them on a serving plate.
- Drizzle with takoyaki sauce and Japanese mayonnaise, then sprinkle with bonito flakes and aonori before serving.
