Ingredients

  • Fresh octopus - 250 grams
  • Ponzu sauce - 60 ml

  • Sesame seeds - 1 tablespoon, toasted
  • Sea salt - to taste
  • Microgreens or shiso leaves - for garnish

Steps

  1. Bring a pot of water to a boil and season with sea salt.
  2. Add the fresh octopus to the boiling water and cook for about 2-3 minutes, then remove and plunge into ice water to stop the cooking process.
  3. Once cooled, remove the skin from the octopus, and slice it thinly against the grain into bite-sized pieces.
  4. Arrange the sliced octopus on a serving plate beautifully.
  5. In a small bowl, mix the ponzu sauce with wasabi, adjusting the amount of wasabi to your taste.
  6. Drizzle the ponzu sauce over the octopus and sprinkle with toasted sesame seeds and finely sliced green onions.
  7. Garnish with microgreens or shiso leaves before serving.
