Ingredients

  • Octopus - 300 grams, cleaned and cut into bite-sized pieces
  • Miso paste - 2 tablespoons (preferably red miso)
  • Mirin - 1 tablespoon
  • Sake - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Sugar - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Green onions - 1 for garnish, finely chopped
  • Sesame seeds - 1 teaspoon, toasted (for garnish)

Steps

  1. In a medium pot, bring water to a boil and add the octopus pieces. Boil for about 5-7 minutes until they turn tender. Drain and set aside.
  2. In a small bowl, combine the miso paste, mirin, sake, soy sauce, and sugar. Mix well to create a smooth sauce.
  3. In the same pot, heat the sesame oil over medium heat. Add the miso mixture and cook for about 2 minutes, stirring constantly to prevent burning.
  4. Add the boiled octopus pieces to the pot and stir well to coat them evenly with the sauce. Cook for an additional 5 minutes, allowing the flavors to meld.
  5. Remove from heat and let it sit for a minute. Serve the Tako no Karamiso hot, garnished with chopped green onions and toasted sesame seeds.
