Ingredients

  • Short-grain rice - 150 grams
  • Octopus (cleaned and diced) - 200 grams
  • Dashi stock - 300 ml
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Green onions (sliced) - 2 tablespoons
  • Carrot (julienned) - 1 small
  • Peas (fresh or frozen) - 50 grams
  • Salt - to taste
  • Nori (seaweed) - for garnish

Steps

  1. Rinse the short-grain rice under cold water until the water runs clear. Drain and set aside.
  2. In a pot, heat the sesame oil over medium heat. Add the diced octopus and sauté for about 3-4 minutes until slightly browned.
  3. Add the julienned carrot and peas to the pot, stirring for another 2 minutes.
  4. Pour in the dashi stock, soy sauce, and mirin. Bring the mixture to a gentle boil.
  5. Add the rinsed rice to the pot and stir well. Reduce the heat to low, cover with a lid, and let it simmer for about 20 minutes or until the rice has absorbed the liquid.
  6. Once the rice is cooked, remove from heat and let it sit covered for an additional 10 minutes to steam.
  7. Fluff the rice with a fork and mix in the sliced green onions. Adjust salt to taste.
  8. Serve warm, garnished with strips of nori.
