Ingredients
- Short-grain rice - 150 grams
- Octopus (cleaned and diced) - 200 grams
- Dashi stock - 300 ml
- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon
- Sesame oil - 1 teaspoon
- Green onions (sliced) - 2 tablespoons
- Carrot (julienned) - 1 small
- Peas (fresh or frozen) - 50 grams
- Salt - to taste
- Nori (seaweed) - for garnish
Steps
- Rinse the short-grain rice under cold water until the water runs clear. Drain and set aside.
- In a pot, heat the sesame oil over medium heat. Add the diced octopus and sauté for about 3-4 minutes until slightly browned.
- Add the julienned carrot and peas to the pot, stirring for another 2 minutes.
- Pour in the dashi stock, soy sauce, and mirin. Bring the mixture to a gentle boil.
- Add the rinsed rice to the pot and stir well. Reduce the heat to low, cover with a lid, and let it simmer for about 20 minutes or until the rice has absorbed the liquid.
- Once the rice is cooked, remove from heat and let it sit covered for an additional 10 minutes to steam.
- Fluff the rice with a fork and mix in the sliced green onions. Adjust salt to taste.
- Serve warm, garnished with strips of nori.
