Ingredients

  • Sushi rice - 150 grams
  • Water - 200 ml
  • Rice vinegar - 30 ml
  • Sugar - 10 grams
  • Salt - 5 grams
  • Cooked octopus - 150 grams, sliced
  • Cucumber - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Radish - 50 grams, thinly sliced
  • Nori seaweed - 1 sheet, cut into strips
  • Sesame seeds - 1 tablespoon
  • Green onion - 1 stalk, finely chopped
  • Shiso leaves (or basil) - 2 leaves, for garnish

Steps

  1. Rinse the sushi rice under cold water until the water runs clear, then drain.
  2. In a pot, combine the rinsed rice and water. Bring to a boil, then reduce to a simmer, cover, and cook for 18 minutes. Remove from heat and let it sit for an additional 10 minutes.
  3. In a small bowl, mix together rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice once it has cooled slightly. Set aside.
  4. Arrange the sliced octopus, cucumber, carrot, and radish beautifully on top of the seasoned sushi rice in two bowls.
  5. Sprinkle the sesame seeds and chopped green onion over the dish, then add the nori strips and shiso leaves as garnish.
  6. Serve immediately and enjoy your Tako no Chirashi!
