- Edamame (shelled) - 0.5 cup (75g)
- Soy sauce - 2 tablespoons (30ml)
- Mirin - 1 tablespoon (15ml)
- Sesame oil - 1 teaspoon (5ml)
- Salt - 0.5 teaspoon (3g)
- Green onions - 2, chopped
Steps
- Rinse the Japanese short-grain rice under cold water until the water runs clear, then drain.
- In a medium saucepan, combine the rinsed rice, water, soy sauce, mirin, salt, and sesame oil.
- Add the diced carrot, sliced shiitake mushrooms, and edamame to the rice mixture.
- Bring the mixture to a boil over medium heat, then reduce the heat to low and cover the pot.
- Simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
- Remove the pot from heat and let it sit, covered, for an additional 10 minutes to steam.
- Fluff the rice with a fork and mix in the chopped green onions before serving.
