Ingredients

  • Water - 1.5 cups (360ml)
  • Carrot - 1 medium, diced (100g)
  • Shiitake mushrooms - 5 pieces, sliced (50g)
  • Edamame (shelled) - 0.5 cup (75g)
  • Soy sauce - 2 tablespoons (30ml)
  • Mirin - 1 tablespoon (15ml)
  • Sesame oil - 1 teaspoon (5ml)
  • Salt - 0.5 teaspoon (3g)
  • Green onions - 2, chopped

Steps

  1. Rinse the Japanese short-grain rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, combine the rinsed rice, water, soy sauce, mirin, salt, and sesame oil.
  3. Add the diced carrot, sliced shiitake mushrooms, and edamame to the rice mixture.
  4. Bring the mixture to a boil over medium heat, then reduce the heat to low and cover the pot.
  5. Simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
  6. Remove the pot from heat and let it sit, covered, for an additional 10 minutes to steam.
  7. Fluff the rice with a fork and mix in the chopped green onions before serving.
