- Granulated sugar - 30 grams
- Cornstarch - 20 grams (for dusting)
- Red bean paste - 100 grams
Steps
- Peel and dice the sweet potato into small cubes, then steam for about 15 minutes until tender.
- Mash the steamed sweet potato in a bowl and let it cool slightly.
- In another bowl, combine the mochiko, protein powder, sugar, and water to form a smooth dough.
- Transfer the dough to a microwave-safe dish and cover it with plastic wrap. Microwave on high for 1 minute, stir, then microwave for another 1 minute until the dough is sticky and pliable.
- Dust a clean surface with cornstarch and transfer the mochi dough onto it. Allow it to cool slightly, then divide the dough into 4 equal pieces.
- Take one piece of dough and flatten it in the palm of your hand. Place a small spoonful of red bean paste and a spoonful of mashed sweet potato in the center.
- Carefully fold the edges of the dough over the filling and pinch to seal. Roll gently into a ball and dust with cornstarch.
- Repeat the process with the remaining pieces of dough and filling.
- Serve the Sweet Potato Daifuku at room temperature or chilled for a refreshing treat.
