This Sweet Potato Burger combines the natural sweetness of roasted sweet potatoes with umami-rich miso and fresh Japanese flavors. Served on a soft bun with crunchy vegetables, it's a delicious vegan alternative to traditional burgers.

- Sweet potato - 200 grams
- Cooked quinoa - 100 grams
- Miso paste - 1 tablespoon
- Soy sauce - 1 teaspoon
- Garlic powder - 1 teaspoon
- Fresh ginger, grated - 1 teaspoon
- Green onion, chopped - 2 tablespoons
- Panko breadcrumbs - 50 grams
- Olive oil - 1 tablespoon (for frying)
- Burger buns - 2
- Lettuce leaves - 2
- Tomato, sliced - 1 medium
- Avocado, sliced - 1 small
- Sesame seeds - 1 teaspoon (for garnish)
Steps
- Preheat the oven to 200°C (400°F). Peel and chop the sweet potato into small cubes and roast in the oven for 20 minutes or until tender.
- In a large bowl, mash the roasted sweet potato with a fork. Add the cooked quinoa, miso paste, soy sauce, garlic powder, grated ginger, and chopped green onion. Mix until well combined.
- Add the panko breadcrumbs to the mixture gradually until the mixture holds together but is still moist. Form the mixture into 2 burger patties.
- Heat olive oil in a non-stick skillet over medium heat. Cook the burger patties for about 4-5 minutes on each side, or until golden brown and heated through.
- To assemble, place each burger patty on a bun and top with lettuce, sliced tomato, and avocado. Sprinkle with sesame seeds and serve immediately.
