Ingredients

  • Sweet potato - 200 grams
  • Cooked quinoa - 100 grams
  • Miso paste - 1 tablespoon
  • Soy sauce - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Fresh ginger, grated - 1 teaspoon
  • Green onion, chopped - 2 tablespoons
  • Panko breadcrumbs - 50 grams
  • Olive oil - 1 tablespoon (for frying)

  • Lettuce leaves - 2
  • Tomato, sliced - 1 medium
  • Avocado, sliced - 1 small
  • Sesame seeds - 1 teaspoon (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F). Peel and chop the sweet potato into small cubes and roast in the oven for 20 minutes or until tender.
  2. In a large bowl, mash the roasted sweet potato with a fork. Add the cooked quinoa, miso paste, soy sauce, garlic powder, grated ginger, and chopped green onion. Mix until well combined.
  3. Add the panko breadcrumbs to the mixture gradually until the mixture holds together but is still moist. Form the mixture into 2 burger patties.
  4. Heat olive oil in a non-stick skillet over medium heat. Cook the burger patties for about 4-5 minutes on each side, or until golden brown and heated through.
  5. To assemble, place each burger patty on a bun and top with lettuce, sliced tomato, and avocado. Sprinkle with sesame seeds and serve immediately.
