Ingredients

  • Sushi rice - 1 cup
  • Water - 1 1/4 cups
  • Rice vinegar - 2 tablespoons
  • Sugar - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Nori sheets - 2 sheets
  • Cream cheese - 100 grams, softened
  • Cucumber - 1/2, julienned
  • Avocado - 1, sliced
  • Carrot - 1/2, grated
  • Smoked salmon - 100 grams, sliced
  • Soy sauce - 2 tablespoons
  • Sesame seeds - 1 tablespoon
  • Green onions - 2, chopped

Steps

  1. Rinse the sushi rice under cold water until the water runs clear, then drain.
  2. In a pot, combine the rinsed rice and water, bring to a boil, then reduce to a simmer and cover for 18-20 minutes until water is absorbed.
  3. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, remove it from heat and let it cool slightly before folding in the vinegar mixture.
  4. On a clean surface, lay one nori sheet shiny side down and spread half of the sushi rice evenly on top, leaving a small border around the edges.
  5. Spread half of the cream cheese over the rice, then layer with half of the cucumber, avocado, carrot, and smoked salmon.
  6. Sprinkle half of the sesame seeds and green onions on top, then carefully roll the nori tightly from the edge closest to you, using a bamboo mat if available.
  7. Repeat the process with the second nori sheet and remaining ingredients.
  8. Using a sharp knife, slice each roll into 6-8 pieces and serve with soy sauce for dipping.
