Ingredients

  • Cauliflower - 300 grams
  • Egg - 1 large
  • Almond flour - 50 grams
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Sliced sushi-grade salmon - 100 grams
  • Sliced avocado - 1 medium
  • Cucumber - 1/2 medium, thinly sliced
  • Nori sheets - 2 (cut into strips)
  • Sesame seeds - 1 tablespoon
  • Wasabi - 1 teaspoon
  • Mayonnaise (Paleo) - 2 tablespoons
  • Lime juice - 1 tablespoon

Steps

  1. Preheat your oven to 220°C (430°F).
  2. In a food processor, pulse the cauliflower florets until they resemble rice, then steam for 5 minutes and let cool.
  3. Once cooled, squeeze out excess moisture from the cauliflower using a clean kitchen towel.
  4. In a bowl, combine the cauliflower, egg, almond flour, and salt, mixing well to form a dough.
  5. Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a round pizza base about 1 cm thick.
  6. Brush the crust with olive oil and bake for 15-20 minutes or until golden and crispy.
  7. While the crust is baking, prepare the wasabi mayo by mixing the mayonnaise, wasabi, and lime juice in a small bowl.
  8. Once the crust is done, remove it from the oven and let it cool slightly before topping.
  9. Layer the sliced salmon, avocado, cucumber, and nori strips on top of the crust.
  10. Drizzle with the wasabi mayo and sprinkle with sesame seeds before slicing and serving.
